Renee Erickson, chef and author of “Getaway: Food & Drink to Transport You,” is making one of her favorite childhood treats: giant, cheesy pastry puffs called gougères. Renee’s gougères are larger than average, making these a decadent treat for any cheese lover. Cheddar cheese is added into the dough and the pastries are topped with more cheddar before going in the oven. The result is a flaky cheddar cheese puff loaded with savory flavor.
